I've been doing hootenannies, they're not as secure but we trade that for a higher user base. For smaller more secure events, we stick to BBQ protocols, but users might have to do some work client side to make things less burdensome on the host.

(My brain is absolutely fried by Discord/course right now and I'm wondering if I need E2EE to meow at my cat)
